Pepperoni and Cheese Burritos

Ingredients: 
 
180 g (about 6.5 oz) cooked spicy New Milano sausage, chopped 
300 ml (1 1⁄4 cups) marinara sauce
200 ml (3⁄4 cup) cottage cheese, blended until smooth
250 ml (1 cup) sharp cheddar cheese, grated 
Garlic powder
Salt, and pepper to taste 
Dried oregano, to taste
8 burrito-sized flour tortillas
Olive oil, for brushing 

 

Instructions:
 
  1. Cut the sausage into small pieces and place them in a bowl. 
  2. Add the marinara sauce, then the blended cottage cheese, and finally the 
    grated sharp cheddar. Mix well until the filling is smooth and evenly 
    combined. 
  3. Divide the filling evenly among the 8 tortillas and roll them up to form 
    burritos. 
  4. Place the burritos seam-side down on a baking sheet lined with parchment 
    paper.
  5. Lightly brush each burrito with olive oil using a pastry brush. 
  6. Sprinkle with garlic powder and dried oregano to taste. 
  7. Bake in a preheated oven at 450°F (230°C) for 8 to 10 minutes, or until the 
    tortillas are lightly golden and crispy. 
  8. Serve hot, optionally with a fresh salad or crunchy vegetables on the side.
