Spicy Sausage Tartare, Avocado, and Lime Vinaigrette

Ingredients

For tartare
200 g spicy sausage, cut into small cubes
One stalk of celery, cut into small cubes
30 ml (2 tbsp) finely chopped chives
15 ml (1 tbsp) of capers, chopped
15 ml (1 tbsp) of pickles, finely chopped 15 ml (1 tbsp) of fresh parsley, chopped Salt and pepper to taste

For the lime vinaigrette
15 ml (1 tbsp) of fresh lime juice
10 ml (2 tsp) of honey
10 ml (2 tsp) of soy sauce
5 ml (1 tsp) of whole grain mustard
10 ml (2 tsp) of extra virgin olive oil
Salt and pepper to taste

 

Preparation

  1. Prepare the vinaigrette:
    In a small bowl, mix the lime juice, honey, soy sauce, whole grain mustard, and olive oil. Season with salt and pepper to taste. Stir well to emulsify the vinaigrette and set aside.
  2. Prepare tartare:
    In a medium bowl, mix the cubed spicy sausage with the diced celery, chives ,capers, pickles, and fresh parsley.
    Add a pinch of salt and pepper and stir gently.
  3. Assemble the tartare:
    Divide the tartare mixture into small presentation rings (or directly onto plates if you don’t have rings). Press lightly to form a compact shape.

 

Serve:
Drizzle the lime vinaigrette over each tartare just before serving. Garnish with fresh parsley leaves or microgreens for an elegant touch.
