Spicy Sausage Frittata with Potatoes and Herbs

Ingredients
150 to 200 g (3⁄4 cup) spicy sausage, cut into chunks
125 ml (1⁄2 cup) medium tomato, peeled, seeded, and diced
250 ml (1 cup) potato, peeled and diced
45 ml (3 tbsp) olive oil
10 ml (2 tsp) crushed garlic
4 eggs
5 ml (1 tsp) ground cumin
2 ml / 1⁄2 tsp) ground cardamom)
5 ml (1 tsp) chopped fresh mint
Salt and pepper to taste
15 ml (1 tbsp) chopped fresh parsley (optional)
Preparation
- Cook the potatoes
Boil the diced potatoes in salted water for 5 to 7 minutes, until just tender. Drain and set aside. - Cook the sausage
In a large skillet, heat the olive oil over medium heat. Add the sausage chunks and sauté for 3 to 5 minutes, until lightly browned. - Add vegetables and spices
Add the garlic, tomato, potatoes, cumin, cardamom, salt, and pepper. Cook for 5 to 7 minutes, stirring regularly, until everything is well combined and fragrant. - Cook the eggs
Whisk the eggs and add them to the other ingredients in the pan. - Finish
Sprinkle with fresh mint and parsley. Adjust seasoning if needed. Serve hot.
