Spicy Sausage Frittata with Potatoes and Herbs

Ingredients

150 to 200 g (3⁄4 cup) spicy sausage, cut into chunks
125 ml (1⁄2 cup) medium tomato, peeled, seeded, and diced
250 ml (1 cup) potato, peeled and diced
45 ml (3 tbsp) olive oil
10 ml (2 tsp) crushed garlic
4 eggs
5 ml (1 tsp) ground cumin
2 ml / 1⁄2 tsp) ground cardamom)
5 ml (1 tsp) chopped fresh mint
Salt and pepper to taste
15 ml (1 tbsp) chopped fresh parsley (optional)

Preparation

  1. Cook the potatoes
    Boil the diced potatoes in salted water for 5 to 7 minutes, until just tender. Drain and set aside.
  2. Cook the sausage
    In a large skillet, heat the olive oil over medium heat. Add the sausage chunks and sauté for 3 to 5 minutes, until lightly browned.
  3. Add vegetables and spices
    Add the garlic, tomato, potatoes, cumin, cardamom, salt, and pepper. Cook for 5 to 7 minutes, stirring regularly, until everything is well combined and fragrant.
  4. Cook the eggs
    Whisk the eggs and add them to the other ingredients in the pan.
  5. Finish
    Sprinkle with fresh mint and parsley. Adjust seasoning if needed. Serve hot.
