Loukaniko Stew with Lentils and Vegetables

Ingredients 

200 g cooked loukaniko sausage, sliced into rounds
15 ml (1 tbsp) olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 carrot, diced
1 celery stalk, diced
1 potato, peeled and cubed
400 ml (1 2⁄3 cups) vegetable or chicken broth
400 ml (1 2⁄3 cups) crushed tomatoes
60 ml (1⁄4 cup) green lentils, rinsed
1 bay leaf
5 ml (1 tsp) dried thyme or oregano
Salt and pepper to taste
A squeeze of lemon juice (optional)
Fresh parsley or dill for garnish

Instructions

  1. Heat the olive oil in a large pot. 
  2. Brown the loukaniko slices until golden. Remove and set aside. 
  3. In the same pot, sauté the onion, garlic, carrot, and celery for 5 to 6 minutes.
  4. Add the potato, crushed tomatoes, broth, lentils, bay leaf, and thyme or oregano. 
  5. Return the loukaniko slices to the pot. 
  6. Bring to a boil, then reduce heat. Cover and simmer for 30 to 35 minutes, until the vegetables and lentils are tender. 
  7. Remove the bay leaf. Taste and adjust seasoning. 
  8. Add a squeeze of lemon juice just before serving for a fresh finish.


Serve hot, garnished with fresh parsley or dill, along with toasted bread or a slice of pita
