Pepperoni, Caramelized Fig, and Goat Cheese Tapas

Ingredients 

150 g cooked pepperoni , thinly sliced 6 to 8 fresh figs, quartered
60 ml (1⁄4 cup) honey
30 ml (2 tbsp) balsamic vinegar
60 g fresh goat cheese, crumbled
4 to 6 slices of baguette (crostini)
5 ml (1 tsp) fresh rosemary
10 ml (2 tsp) olive oil
Salt and pepper to taste
Chopped nuts (optional)

Instructions 

  1. Prepare the crostini
    Preheat the oven to 180°C (350°F). Place the baguette slices on a baking sheet, lightly brush with olive oil, and bake for 8 to 10 minutes or until golden and crisp. Remove from the oven and set aside. 
  2. Caramelize the figs
    In a small skillet, heat the honey over medium heat. Add the fig quarters and balsamic vinegar. Simmer gently for 3 to 4 minutes, until the figs are tender and lightly caramelized. Set aside. 
  3. Cook the pepperoni
    In a hot skillet, sauté the pepperoni slices until golden and slightly crispy. Remove from heat and set aside. 
  4. Assemble the tapas
    On each crostini, crumble a bit of goat cheese. Top with a slice of pepperoni and a piece of caramelized fig. Add a small sprig of rosemary or thyme. 
  5. Finish and serve
    Season with salt and pepper to taste. For added texture, sprinkle with chopped nuts.
