<\/strong><br \/>200 g spicy sausage, cut into small cubes <br \/>One stalk of celery, cut into small cubes<br \/>30 ml (2 tbsp) finely chopped chives<br \/>15 ml (1 tbsp) of capers, chopped <br \/>15 ml (1 tbsp) of pickles, finely chopped 15 ml (1 tbsp) of fresh parsley, chopped Salt and pepper to taste<\/p><p><strong>For the lime vinaigrette <\/strong><br \/>15 ml (1 tbsp) of fresh lime juice<br \/>10 ml (2 tsp) of honey<br \/>10 ml (2 tsp) of soy sauce <br \/>5 ml (1 tsp) of whole grain mustard<br \/>10 ml (2 tsp) of extra virgin olive oil<br \/>Salt and pepper to taste<\/p><p>\u00a0<\/p><p><strong>Preparation<\/strong><\/p><ol><li><strong>Prepare the vinaigrette:<\/strong><br \/>In a small bowl, mix the lime juice, honey, soy sauce, whole grain mustard, and olive oil. Season with salt and pepper to taste. Stir well to emulsify the vinaigrette and set aside.<\/li><li>Prepare tartare:<br \/>In a medium bowl, mix the cubed spicy sausage with the diced celery, chives ,capers, pickles, and fresh parsley.<br \/>Add a pinch of salt and pepper and stir gently.<\/li><li><strong>Assemble the tartare:<\/strong><br \/>Divide the tartare mixture into small presentation rings (or directly onto plates if you don\u2019t have rings). Press lightly to form a compact shape.<\/li><\/ol><p>\u00a0<\/p><p><strong>Serve:<\/strong><br \/>Drizzle the lime vinaigrette over each tartare just before serving.
