rounds<br \/>15 ml (1 tbsp) olive oil<br \/>1 medium onion, chopped<br \/>2 garlic cloves, minced<br \/>1 carrot, diced<br \/>1 celery stalk, diced<br \/>1 potato, peeled and cubed<br \/>400 ml (1 2\u20443 cups) vegetable or chicken broth<br \/>400 ml (1 2\u20443 cups) crushed tomatoes<br \/>60 ml (1\u20444 cup) green lentils, rinsed<br \/>1 bay leaf<br \/>5 ml (1 tsp) dried thyme or oregano<br \/>Salt and pepper to taste<br \/>A squeeze of lemon juice (optional)<br \/>Fresh parsley or dill for garnish<\/p><p><b>Instructions<\/b><\/p><ol><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Heat the olive oil in a large pot.\u00a0<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Brown the loukaniko slices until golden. Remove and set aside.\u00a0<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In the same pot, saut\u00e9 the onion, garlic, carrot, and celery for 5 to 6 minutes.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Add the potato, crushed tomatoes, broth, lentils, bay leaf, and thyme or oregano.\u00a0<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Return the loukaniko slices to the pot.\u00a0<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Bring to a boil, then reduce heat. Cover and simmer for 30 to 35 minutes, until the vegetables and lentils are tender.\u00a0<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Remove the bay leaf.
