garnish<\/b><br \/>Homemade pita chips<br \/>Fresh herbs (dill, flat parsley, microgreens) Orange zest (optional but Prepare the lentils<\/b><\/div><div>\u00a0<\/div><div>Saut\u00e9 the onion and celery in olive oil until tender.<\/div><div>Add the cooked lentils, red wine, mustard, thyme, salt, and pepper.<\/div><div>Simmer on low heat until the wine is almost absorbed.<\/div><div>Keep warm.<\/div><div>\u00a0<\/div><div><p><b>2. Prepare the loukaniko\u00a0<\/b><\/p><\/div><\/blockquote><div><blockquote><p>Slice the loukaniko into 1 to 2 cm rounds.<br \/>Roast in a pan with a little olive oil until golden and slightly crispy.<br \/>Set aside.<b>\u00a0<\/b><\/p><\/blockquote><\/div><blockquote><div><p><b>3. Prepare the feta cream\u00a0<\/b><\/p><p>Heat the cream gently in a small saucepan.<br \/>Add the crumbled feta and whisk until the cheese partially melts.<br \/>Blend with an immersion blender until smooth.<br \/>Add lemon juice and a little white pepper if desired.<br \/>Keep warm or at room temperature.<\/p><p><b>4. Plate the dish\u00a0<\/b><\/p><p>Place a bed of lentils in the center of each plate.<\/p><p><b>5.
